Hubby's Ratatouille making skills...

I sent hubby on this mornings Growers Market run. Most Saturday mornings one of us goes, and returns with the mandatory 2 mochaccino's and 2 fluffy's from our favourite cafe and the fruit and vege loot. After this morning's run, hubby was inspired to create some Ratatouille and a vegetarian Lasagna, neither of which we have ever eaten before. I don't think we have ever bought an eggplant...ever! I was instructed to leave the kitchen and him to it... Very hard for this kitchen loving control freak to do! He hardly gets the opportunity to cook in my kitchen, because...I prefer to ;)
So I was super impressed with the end result...

Zucchini and Eggplant layered lasagna (with chicken for protein!) and a crisp green salad with nuts and balsamic dressing.


Salting eggplants can be fun!

Oh YUM! That sounds amazing! I only recently learned about salting eggplants (thanks to masterchef). Mmmmmm!

Go the eggplant! Korean's love eggplant to the extreme. I hadn't really eaten it until living here - I think it is served out our school pretty much everyday in many different ways. The lasagna looks amazing!

Yum sounds delish. Cracks me up that it's a 'vegetarian' lasagne with Chicken haha :-)
