Happy belated St Paddy's Day. Unfortunately I had to sleep off a night shift on Saturday, and all I could think of all weekend was making some St Paddy's day cupcakes.
But first I had to brave it in to a bottle store for some Irish cream. Being not much of a drinker I always feel awkward going into liquor stores...a little naughty even! Walking out with my brown bag covered liquor, I was a little miffed I didn't even get ID'd. Oh the tragedy of looking old and haggard at 30.
Any hoo. Here is the finished product. An Irish Coffee cupcake. The cupcake is based on Delissimons Best chocolate fudge cake. I added a shot of coffee in place of the water. And I didn't have any white vinegar...but it turned out okay.
The Icing is a Baileys butter cream. Basically 100grams of butter, 1 cup of Icing sugar and a shot of Baileys...all beaten until light and fluffy. Add more icing sugar if needed to get the right consistency.
I made them for a special friend who is a big fan of Irish cream coffee however her last experience with Irish cream coffee did not go so well...
And now that I have a bottle of Baileys I can make Meghans Baileys Chocolate Cheesecake.
